It’s October Long Weekend here in Annette’s Kitchen at All About Me B&B so enjoy your extra day off  this great time of year!!! A nice time to jump into the kitchen and bake something nice for your family.

Well, it’s going to be summer very soon, so before we enjoy those summer desserts, I thought I would take you back again to my childhood where my mum was in the kitchen cooking the family well-loved ‘Tutti Fruitti Cake”.

This is a light chocolate cake with raisins and walnuts to enjoy – a great cake for ‘everyone’!!!

Ingredients

1/2 cup butter
1 cup brown sugar
1 cup milk with 1 teaspoon bicarbonate of soda
1 egg
1/2 cup chopped raisins
1/2 cup walnuts
1 1/2 cups self-raising flour
1 teaspoon cocoa
pinch of salt

Method

  1. Cream butter and sugar
  2. Add egg and milk with bicarbonate of soda
  3. Mix in the sifted together flour, cocoa and salt
  4. Mix well
  5. Stir in raisins and walnuts
  6. Pour into a greased lined 20cm round cake tin
  7. Bake in a moderate oven for approximately 40 minutes

We then iced it with chocolate icing, however after slicing you might just like to drizzle chocolate sauce over or dust with icing sugar and serve with cherries and cream!!!
