Welcome Bank to Annette’s Kitchen at All About Me B&B and it’s Spring time.  What a glorious time of the year!!!

Well, who needs that quick meal once in a while?  You now have one, the good old Tuna Casserole.

Again, this was a great favourite with my family whilst growing up.  A quick and easy one for mum to cook as we  kids were in and out playing sport.

Tuna is a source of high-quality protein with almost no fat. It contains all essential amino acids required by the body for growth and maintenance of lean muscle tissue.

1 large can of tuna
1 cup cooked peas
1 cup cooked rice
2 tablespoons butter
1 small chopped onion
2 tablespoons of plain flour
1 cup milk
1/2 teaspoon salt, pinch of pepper
1/2 teaspoon Worcestershire sauce
2 tomatoes, thinly sliced
1/2 cup grated cheese

  1. Place layers of tuna, cooked rice and peas in greased casserole dish
  2. Melt butter, add onion, cook till tender
  3. Stir in flour, cook for a few minutes, then add milk until boils and thickens
  4. Add Worcestershire sauce, salt and pepper.
  5. Pour over layers in casserole.
  6. Arrange sliced tomatoes on top and sprinkle with cheese
  7. Bake in moderate oven for 20-30 minutes

I LOVE white sauce, so I actually doubled the mixture for the sauce ingredients above.

Grab some garlic bread and away you go!!!
