It’s Winter time in Annette’s Kitchen at All About Me B&B and isn’t the cooler months just gorgeous!!!  We are sure enjoying our fireplace.

I am going to share a great soup to ‘spice’ you up to keep you warm over Winter.

Sweet potatoes are known to maintain healthy blood pressure and protect against cancer.  They are also high in fibre!!! – all good reasons to add them to your diet.

This is a yummy and easy soup to cook up – give it a go!!!


2 tablespoons vegetable oil
1 large onion, chopped
1 carrot, chopped
1 clove garlic, chopped
600g peeled and chopped sweet potato
1 tablespoon Thai red curry paste
1.25 litres chicken stock
1/2 cup coconut milk
1 lime, quartered, to serve


  1. Heat oil in a large saucepan over medium heat
  2. Add onion, carrot, garlic, sweet potato and curry paste
  3. Cook, stirring for about 5 minutes
  4. Add chicken stock and bring to boil
  5. Cover and simmer for about 20 minutes or until vegetables are tender
  6. Allow to cool a little, then puree, in batches, if necessary
  7. Before serving, add coconut milk and gently reheat
  8. Season to taste and serve with lime wedges

This recipe serves 4 so you might like to double the recipe as you are going to love this one, I promise you!!!
