Welcome back to my Kitchen and Happy New Year 2020!!!

It was definitely a devastating end to 2019 and start to 2020. My thoughts are with all who have lost friends and family, together with homes and businesses.  And of course, to all our gorgeous wildlife.  It has been a very sad time. Let’s hope this sort of disaster will never happen again in our beautiful AUSTRALIA!!!

I am starting the year off with another recipe from my childhood days which I have continued cooking and enjoyed over the years at our barbecues.

Ingredients

1 tablespoon butter
500g bacon pieces
2 large onions, chopped
clove of garlic
can of tomato soup – a little tip, I always use Heinz Big Red Tomato Soup
1/4 cup water
1/2 tablespoon vinegar
1 dessertspoon brown sugar
1 dessertspoon Worcestershire sauce
1/2 teaspoon dry mustard
1 large can of 3 bean mix

Method

  1. Heat butter then add bacon pieces, onions, garlic and saute for 5 minutes
  2. Add tomato soup, vinegar, brown sugar, Worcestershire sauce and dry mustard
  3. Bring to boil, simmer uncovered for 5 minutes
  4. Drain beans, add them
  5. Simmer covered for 15 minutes
  6. Add water, only if necessary

This recipe matures very nicely if it’s cooked a day before required – but not a must!!! You can also add more garlic – we love our garlic here so I would use probably 8 cloves!!!

All you need now is some meat on the BBQ, potato chats in a pot boiling and some crusty bread – Wow!!!! Yummo!!!
