It is March already and this month I am a sharing another one of my favourites!!!.  It is so easy.  All ingredients in one bowl and mix.

A Sand Cake is a very old-fashioned cake like a cross between a light sponge and a heavy butter cake.  It is great iced, buttered or just plain on its own!!!  I have been making Sand Cake for the past 40 years now.


1/4 cup milk
125 g butter
3/4 cup sugar
2 eggs
1 cup Self Raising flour
1 tablespoon cornflour


icing sugar


  1. Place ingredients in bowl in order given
  2. Beat all together for 4 minutes
  3. Place in a prepared loaf tin.
  4. Cook in moderate oven for 35-40 minutes
  5. Cool and either ice it or leave plain.

It freezes really really well. It is still one of the best recipes and works every single time!
