Welcome back and hope everyone enjoyed their long weekend!!! The warm Summer months are just around the corner now.

So I thought you would like this dip which has a little ‘flare’ just for you.  A dip topped with seafood – what’s not to love!!!

My mum asked for this delightful dip after enjoying  it so much at a barbecue many years ago (actually back on the 12 October 1991 as noted on the paper it was written on) – hence the name ‘Robyn’s Dip” – what its real name is, we will never know.

It’s an easy and simple one to have on hand for entertaining in these hot summer months ahead when everyone loves to enjoy fresh seafood of some kind with maybe a glass of Chardonnay or Pinot Gris!!!

Shellfish is good for you too as it is low in calories and rich sources of lean protein, healthy fats, and many micronutrients.  So go grab some local seafood and get making this one!!!

Ingredients

250g Philly cream cheese
1 tablespoon coleslaw dressing
1 tablespoon mayonnaise
2 tablespoons black sauce
1 finely chopped onion
1 clove crush garlic
Prawns or crab meat
finely chopped parsley or finely chopped shallots

Method

  1. Mix together cream cheese, coleslaw dressing, mayonnaise, black sauce, onion and garlic
  2. Spread the mixture onto a plate
  3. Spread a thin layer of spicy tomato sauce or chill sauce over the top
  4. Top with crab meat or prawns
  5. Sprinkle with parsley or finely chopped shallots
  6. Serve with biscuits or bruschetta toasts

Now how easy was that!!! Nice for the months ahead of entertaining or a great one to serve up on your favourite Sport’s Grand Final night this month.
