Hello from Annette’s Kitchen at All About Me B&B.

It’s now April would you believe and Easter is approaching fast!!!  This month I decided to introduce you to some comfort food ready for the cooler months ahead.

An old favourite of mine – Lemon Delicious Pudding. My mum use to ask me “what dessert would you like me to cook for you whilst you are down” and this pudding was one of my top three desserts she cooked – always a winner!!!

Ingredients

1 cup sugar
1 tablespoon butter
1 really heaped tablespoon plain flour
1 1/4 cups milk
1 lemon – juice and rind
2 eggs
pinch of salt

 

Method

  1. Cream butter and sugar
  2. Add lemon juice, rind, yolks of eggs, flour and milk
  3. Lastly add well whipped white of eggs
  4. Mix lightly together and pour into your oven dish
  5. Bake in pan of water in slow oven – 30 minutes

The magic in this old-fashioned pudding lies purely in the way that even through it goes into the oven as one mixture, it emerges as a gorgeous light sponge sitting over creamy mouth-watering sauce.

Note:  if you wish to double this recipe only use 2 cups of milk
