Happy New Year.  Hope everyone had a great Christmas considering what a crazy world it is and here’s to a better 2021 for all!!!

Well I started looking through mum’s recipe file she kept all her little recipes in that she collected over many years either from newspapers, magazines, family or friends.

Over the years mum even shared some with me for my own uses and entertaining purposes.  Here is another one for you and who does not love caramel!!!


250g vanilla caramels
1 cup milk
1 tablespoon gelatine
1/4 cup water
1 teaspoon vanilla
1 cup whipped cream
1/2 cup chopped walnuts
1 prepared pastry case


  1. Melt caramels with milk in top of double saucepan
  2. Stir occasionally
  3. Soften gelatine in water, add to caramels with salt
  4. Stir until gelatine has dissolved
  5. Remove from heat, allow to chill until mixture is just beginning to set
  6. Fold in whipped cream, walnuts and vanilla
  7. Spoon into a prepared pastry case
  8. Refrigerate until firm

You could make your own pastry case or to make it even easier, buy one.

You may like to substitute walnuts with pecans or hazelnuts and serve with icecream.
