It’s July already. Wow!!! I hope everyone is enjoying this time of year with the chill factor and all.  We have had some frosts which have been so picturesque.

This month it is a great ol’ favourite pie – One both my mum and myself cooked and my dad just loved!!!

Ingredients

Shortcrust pastry:

125g butter
2 cups plain flour
pinch of salt
cold water

Filling:
4 rashers bacon, chopped
5 eggs
cayenne pepper
salt
1 small onion, grated
2 tablespoons parsley

Method

  1. Rub butter into flour and salt until it resembles breadcrumbs
  2. Add some cold water, enough to mix into a firm dough. Knead lightly.
  3. Wrap in plastic wrap and place in fridge for 30 minutes
  4. Grease pie dish and roll half the pastry to line the pie dish
  5. Sprinkle the bacon over the base, then break eggs over the bacon
  6. Scatter the onion and parsley over the eggs then add your pinch of cayenne pepper and salt.
  7. Moisten around the edges of the pastry edge with water
  8. Roll out the other half of pastry and cover the filling and crimp the edges
  9. Brush with milk before making two slits in the top.
  10. Bake in a moderately hot oven for 15 minutes then reduce to moderate oven for a further 30 minutes

    Note: Serve this pie hot or cold!!!

    My advice is grab your freshly made pie, a picnic rug and a bottle of your favourite and head outside for an enjoyable picnic.I bet most of you have enjoyed a Bacon and Egg Pie at some time.  A great alternative to have for breakfast too.
