Happy August to you all!!!

It’s a drizzly day so I thought I would jump on and share with you another of my family’s favourite.

Dad wrote this recipe out for me many years ago after visiting my parents where I enjoyed more of my mum’s great home baking.

Nuts and dried fruits are healthful foods because of their nutrient profiles. They provide dietary fibre, potassium and a variety of health protective bio active compounds. Nuts also are a source of protein and monounsaturated  and polyunsaturated fatty acids.

This recipe makes two loaves so you can enjoy one and put the other in the freezer for unexpected guests.


1 1/2 cups apricot nectar (415ml)
1 1/2 cups raisins
12 dried apricots, chopped
1 cup sugar
1 good tablespoon butter
grated rind of 1 orange
1 egg
1/4 cup milk
2 1/2 cups plain flour
2 level teaspoons carb, soda
1/2 cup chopped walnuts
1 level teaspoon salt


  1. Put apricot nectar, raisins, apricots, sugar and butter into a saucepan.
  2. Bring to boil – simmer for 5 minutes – Cool
  3. Add grated orange rind
  4. Beat egg with milk, add to the apricot mixture
  5. Stir in sifted flour, salt, carb. soda – Mix well
  6. Stir in walnuts
  7. Place mixture into two well greased bar tins
  8. Bake in moderate oven for 30 to 40 minutes

Again, how simple was that!!!

Slice and enjoy warm or cold with some butter and your freshly brewed cuppa.
